I was just curious to know the pros/con from a business and a technical side for NOT migrating ANY active mail into a new Exchange environment from Domino? Users would come in on Exchange day as a new employee with a "clean" mailbox.

You first need a Windows Server 2003 SP1 or higher DC (with Schema master). You can use your new Exchange server for this. First, upgrade the new to Windows Server 2003 SP2 before starting anything.
